Sparkling wine from the Penedes, but not Cava. Though it was a Raventos who made the first Cava in the 1870s, they pulled out of the Cava, D.O. in 2012. In the spirit of the season, we’ll taste two very dry sparklings with Josep as we talk about everything from history and family to biodynamic farming.
